There are two types of White Crystal, one with Star Shifting ability and one without. Both have no differences in size, color, or power level, with the only difference being Star Shifting ability.
All with Star Shifting ability are taken from Star Descendants, like the Star Progeny Master and South Crown and North Crown, or Xisluo and the Witch. Those without Star Shifting ability are dug up from the ground. To this day, Ange hasn't figured out the difference between the two.
